Avril's Granola Recipe

OK, after many requests here it is, Avril's Granola recipe. Super easy, Super good for you! This recipe makes a great big batch that when stored in an airtight container keeps well for up to 2 weeks, but that’s not an issue here as it doesn’t last long at Tom Blake House. Make a smaller batch or it also freezes really well. Enjoy!

Delicious and Healthy, here’s the science… Jumbo oats are high in fibre & improve diet quality, help manage cholesterol & balance blood sugar levels; support gut health & digestive function, may help with weight management & to fight against cancer, may modulate immune function and contain plant compounds with protective properties.

Seeds- sunflower, pumpkin, sesame, chia & flax, these seeds are loaded with antioxidants, vitamins and protein which protect your body from inflammatory diseases, stress busters and prevent heart disease

Nuts-  are rich in healthy fats, antioxidants, protein and vitamin E.

Coconuts are a nutritional powerhouse brimming with vitamins B, C and E, along with healthy fats, fibre, protein and minerals such as potassium and iron.

Honey- I like to use local organic honey which boosts the immune system and is known to have antibacterial and anti-inflammatory properties  

*Oil- I like to use a mixture of coconut and sunflower oil getting all the benefits of coconut and sunflower oil is rich in vitamin E and monounsaturated fats, making it a popular choice for heart health.

Maple syrup- contains numerous antioxidants and supplies important vitamins & minerals, fights inflammatory diseases and improves digestion, helps protect skin health and may help protect against cancer, a healthier alternative to sugar.

Avril’s Granola

Ingredients:

Dry ingredients:

300grams of jumbo oats

50grams of sunflower seeds

50grams of pumpkin seeds

2 tablespoons of sesame seeds

2 tablespoons of chia seeds

1 tablespoon of flax seeds/milled flax

50grams of flaked almonds

1 handful of almonds

50grams of chopped hazelnuts

1 handful of hazelnuts

Pinch of salt

50grams of coconut, I like to use a mix of desiccated & flakes

Wet ingredients:

3 tablespoons of honey

4 tablespoons of oil*

125 millilitres of maple syrup

Method: Preheat oven to 140 degrees.

Combine all the dry ingredients, except the coconut, in a large bowl.

In a measuring jug combine all your wet ingredients and give them a good stir.

Pour the wet mixture into the dry ingredients and mix thoroughly in the bowl.

Spread the mixture out flat on 2 baking sheets.

Place on 2 shelves in your preheated oven for 15 minutes.

Take out of oven and shake coconut on top and give the ingredients a good stir. Put back in oven for another 15/20minutes.

The mixture should be nicely toasted and a golden brown colour. Remove from trays and place on a cool baking sheet to cool completely. As the honey & syrup cool down they form lovely clusters of nutty granola. Spoon into an airtight container to store. Delicious and Healthy, serve simply with some natural yoghurt & fresh fruit- or coconut yoghurt & compote, my go to breakfast! Or the perfect topping for my açai bowl Or topped on some stewed fruit for a yummy fruit crumble- Lots of possibilities!
